A unique range of Australian made BBQ rubs following the traditions of regional US BBQ styles.

Many of the rubs and blends were formulated specifically for a certain ingredient, such as pork or beef.  

 

Others are all-rounders or bases for cooking a traditional American dish like fajitas.

All are high quality and include only what the style calls for.  Nothing is included as filler.

 

All natural, no anti-caking agents or preservatives.  

Often used on meats, of course - but they contain no animal products and can be used to make delicious, vegan friendly dishes as well.

Winner Silver Medal in the RASV 2016 Australian Food Awards for Salts/Spices

 A classic Texas Brisket rub and then some. This blend takes off from the traditional salt n' pepper rub - though we include those in the form of high quality Victorian Pink Lake salt and freshly cracked black pepper. But we had smoldering warmth of smoked chipotle powder, cumin and herbs.

The perfect solution to low n' slow beef brisket and ribs, turkey and chicken. However, playing around a bit, we found we love this on grilled lamb and we love to cure bacon with this as a key flavour!

A BBQ rub that is rich and earthy, smoked and savoury.

This blend features the subtle warmth of the large, black Pasilla capsicum.  Inspired by our heritage in the Ozarks of Missouri, this was originally our rub for venison.   Only a hint of heat!

A good all-rounder, it shines on lamb - either slow cooked or mixed with a bit of oil to marinade on the grill.  The rub you want for venison, kangaroo and other game meats.

Absolutely tons of tropical flavour and a mouthful of blended chilli heat.

This blend is super hot. But not just about the chilli. There's no fun in that. It's also chockers with herbs and tropical spice like cinnamon, allspice and others. The smells alone will transport you to the West Indies.

Fantastic on roast chicken, vegie kebabs... there's not much it's NOT good on... IF you can take it.

The Clucky Country Chook Rub

Inspired by the Mississippi Delta, it has a bit of cayenne in with the smoky flavours and herbs. But it's not terribly hot. It's great on any bird, roasted, smoked or on the grill.

This is our go-to seasoning for the famous classic southern fried buttermilk chicken.

The Texan Gent Fajita Rub

A spicy blend of southwest flavours meant to convert that plain bit of beef or chicken breast into something memorable in minutes.

This has long been a staple at our house.

Simply marinate thinly sliced chicken breast, beef rump steak... or the traditional Texan choice of skirt steak in lime juice (and minced garlic if desired). Then rub with the spice and grill or pan fry!

Slice and serve with tortillas, vegies and condiments like our salsa or guacamole. Includes traditional, gluten-free maize kernel flour (corn masa) for binding.  

Makes an excellent seasoning for braising too.

Becoming an Australian has an effect on a person... and so it did with me! 

 

This is our first blend made entirely with Australia in mind.  It's native goodness, it's history and it's future.    What we came up with is a luscious blend of ingredients made to complement seafood rather than overwhelm.

It's built on a base of Australian carrot for natural sweetness and Tasmanian kelp for the scent and flavour of the sea.   It's lifted by native bush herbs such as Lemon Myrtle, Pepper Leaf and Saltbush.   Finally, all this is complemented by newer arrivals to our shores - cardamom, star anise, and even a faint touch of lemongrass.   

It all works so well together, just like the country that inspired it.

A blend of 16 spices, including a blend of mild chillis,that added to fresh ingredients will make one incredibly, intensely flavourful pot of the famous Texas stew.

 Beans, no beans... we won't tell. We like vegies in ours and sometimes, we forget the carne (meat) and go with lentils instead. Maybe red wine.. or beer.. or coffee! Up to you - it's hard to make a bad pot of chili.

Our premium taco seasoning takes away all the unnecessary or filler ingredients and focuses on everything to do with flavour and versatility.

 

Gone are the standard paprikas, cornstarch and dehydrated tomato the mass produced packets often contain. Instead, enjoy freshly ground chillis of authentic Mexican types like chipotle and pasilla, oregano, and traditional gluten-free maize kernel flour (corn masa harina) for binding AND flavour.

Then, add your own tomato (fresh or paste) for the familiar flavour base of some types of tacos... OR... leave it out and toss fish pieces (with or without bread crumbs) and give a quick fry/grill for street style fish tacos.

We also use this in our cornbread and a delicious chicken corn chowder!
